Introducing Regenerative Organic Certified™ (ROC™): Farming Like the World Depends on It

In February of 2019, Tablas Creek was approached by Elizabeth Whitlow (Executive Director of the Regenerative Organic Alliance) to see if we would like to take part in a pilot program of a new approach to farming called Regenerative Organic. It was clear from the organizations behind this effort, including the Rodale Institute, Patagonia, and Dr. Bronner’s, that this was going to be appealing, both inclusive of and yet more comprehensive than organic and biodynamic. I’ll let their Web site explain:

“Regenerative Organic Certified™ was established in 2017 by a group of farmers, business leaders, and experts in soil health, animal welfare, and social fairness. Collectively called the Regenerative Organic Alliance (ROA), our mission is to promote regenerative organic farming as the highest standard for agriculture around the world.”

At first, considering the fact that we are already certified organic and biodynamic, juggling a third certification was not the most exciting proposition for me. But as I began to dig through the ROC™ Framework and its requirements, it became clear that this was a certification that Tablas Creek Vineyard had to get behind and fully support. We accepted the invitation to be the only winery in the pilot and the ball started to roll.

Regenerative farming is a style of farming in which soil health and building that soil is the main focus. It is a term that was developed by Robert Rodale (the son of the legendary organic farmer J.I. Rodale) to “distinguish a kind of farming that goes beyond sustainable.” But as appealing as this sounds, there’s more: regenerative organic builds in requirements that participants also certify the humane treatment of any animals on the farm and that the farming crews are paid living wages, work in safe conditions, and understand their rights. Therefore, this certification incorporates three pillars; soil health, animal welfare, and social fairness.

The heart of Regenerative Organic Certified™ is the Soil Health Pillar. The property must be certified organic. Various regenerative farming tactics must be employed such as no-till farming (with few exceptions), cover cropping, incorporation of livestock and mob grazing (when animals are given a small area where they can completely graze that area in a short amount of time and then are moved to start the process over again), and creating habitat for pollinators and beneficial insects are a few of the recommended or required practices. Composting on-site is encouraged. Comprehensive soil tests showing that you’re maintaining or building carbon are a requirement, because one of the fundamental tenets of ROC™ is that farming can be and must be an agent for fighting climate change and reducing the use of nonrenewable resources. After all, their slogan is “Farm like the world depends upon it.”

Because of the work we've been doing with biodynamics, there weren't many practices we needed to change or implement here. But the testing that we needed in order to show that we were building carbon content in our soils was tremendous validation that the way that we've been farming really is capturing carbon and building soils that match up well with the highest national and international standards. 

Jordy with AlpacaFor the Animal Welfare Pillar, like the Soil Health Pillar, ROC™ requires that livestock on the property are to be certified organic under USDA standards. The humane treatment of the livestock in all aspects of their life is a necessity. The health, nutrition, shelter (where applicable), protection, herding methods, handling methods, transport, and slaughter are all evaluated when applying to be Regenerative Organic Certified™.

As is true with any pilot program, the goal is to incorporate new standards while providing feedback to help make those standards stronger and more consistent. By this measurement, the pilot program was a huge success. Both Tablas Creek and the ROA learned a great deal about which requirements within the pillars needed adjustments and which didn’t for vineyards. For example, the initial draft of the standards included an ironclad requirement for no-till farming. In the process of trying to achieve the “gold” ROC™ standard, we picked up a few more certifications along the way. Not only is the herd certified by CCOF, Demeter-USA, and Regenerative Organic, they are also certified by Animal Welfare Approved. I can assure you, this highly decorated flock is extremely proud of themselves at the moment and if you were to see them now you’d swear they looked a bit taller.

What separates ROC™ from most other certifications is its Social Welfare Pillar. The dark side of agriculture in today’s world is how farmworkers are treated. This certification addresses that situation head on. It ensures that the farmworkers, whether employed or subcontracted, receive a living wage, that they understand their rights, and that their working conditions are clean and safe. These are just a few examples of what is incorporated in the Social Fairness Pillar.  

We also received a certification from the Equitable Food Initiative. This group ensures the social welfare of the farmworker crews on the property. We all spent a week of intensive training together. These sessions lasted all day long and consisted of physical activities, team building skills, communication skills (both with each other and management), problem solving skills, and education sessions in which they and we together explored in detail their rights as farmworkers both individually and as a group. It was an extremely powerful week.

Not all of the third party certifications that we obtained are necessary for achieving Regenerative Organic Certified™. We took these extra steps in an attempt to obtain the highest level of the certification. For anyone who is reading this post and is interested in obtaining this certification for your operation, reach out to the ROA to determine where you are on the path to ROC™ and what certifications you will need.

Tablas Creek Vineyard has always been extremely proud of our organic and biodynamic certifications. That said, we have never felt that the certifications were ends in and of themselves. And there are pieces of both of those protocols that we think could be improved. Anyway, we farm the way we do because we feel that it is the right thing to do for the land and the people that work here. But this certification is different. It sends a powerful message to the wine industry, consumers, and our local community. It shows them that Tablas Creek is not willing to accept anything less than the very highest standard for our soils, our animals, and the welfare of the people who work here.

We are beyond proud to be the first vineyard in the world to be Regenerative Organic Certified™ and we fully believe that this certification can and will be the future of farming in all forms of agriculture!!

Sustainability Matters: We ditched the plastic water bottle. And so should you.

Have you been to our tasting room? If you have, you’ve probably seen and enjoyed the complimentary cool, fresh water we provide in reusable stainless steel canteens. Our guests are welcome to enjoy this water while they are visiting; we ask that they return the canteens when they're done. And most people do. We often receive comments from our first-time visitors expressing what a genius idea it is to provide water in reusable canteens instead of single-use plastic bottles, and that they wish more other places adopted it. To us, finding alternatives to plastic is more common sense than genius.

Ever since we opened our doors to the public in 2002 we have made sure water is provided to our guests. That's an essential accommodation for any business serving wine and a common courtesy for a winery like us who wants to get our guests out to see how grapes are grown in an often warm, dry climate. In our first few years, we hosted tastings in a smaller tasting room at the western edge of our winery, and used 5-gallon reusable water jugs. But as our traffic increased, and we got more demand for water to take out on tours, we switched to a more convenient alternative: plastic bottles with our logo on the label. From June 2007 to June of 2011 we purchased one pallet of single-use water bottles roughly every five and a half weeks. Each pallet had 84 cases, and each case had 24 bottles, which meant we were going through some 19,000 bottles per year.

That summer, our General Manager Jason Haas had the common-sense idea to replace the single-use plastic bottles to the reusable stainless steel canteens we offer now. I asked him why, and he said "it always made me a little queasy seeing the pallets of water arrive, and knowing that we had a hand in creating demand for all this plastic. It seemed like there had to be a better way. When I came up with the idea of the stainless steel canteens, I kicked myself for not having thought of it earlier." This decision turned out to be good for our bottom line as well as for the environment. We lose between 5% and 7% of the canteens. They cost roughly four times what a plastic water bottles cost. The cost of the water filtration station and the labor to sterilize and refill the empty canteens each morning have been modest. So, we figure we've reduced the cost of providing water to our guests by some 75%. And the reduction in the amount of plastic waste we were producing has been dramatic. That was important even when the plastic that we were collecting was being recycled. With recent changes to the international plastic recycling supply chain it's even more so.

You may assume that plastics thrown into your recycling bin end up reprocessed into a new material. New research (and changes to international trade) suggest that's largely not the case. In fact, worldwide, 91% of plastics are not recycled. For the last 30 years, most of the plastic waste the US and many other countries produced was exported to China to be recycled. But as of January of 2018 China stopped importing all plastic waste from residential collection. This means China went from being the main world’s plastic waste recycler to only buying plastics that are 99.5% pure, this means 99.5% clean, free of contaminants like left over food, liquid, grease, etc. As a consequence, bales of plastic waste began to pile up around the world, from Japan to the UK, Germany, Australia, and yes, the United States.

Most consumer plastics today have no market value in the recycling industry, and virgin plastic is cheaper than its recycled version. Single-use plastic is everywhere, from the grocery store to the shopping mall to the fast-food restaurant. And yet, we don't have to go back that far in history to find a culture that didn't embrace a throw-away lifestyle. If we look back at the World War II era, thriftiness was encouraged. People collected metal to be melted into bullets. But the years following the end of WWII were an era of economic growth and prosperity in the US, and the focus on consumer products was ease of use. A sign when the society began to switch from a thrift based model to a throw-away model is an article published in August 1955 by LIFE Magazine that includes a remarkable image by Peter Stackpole of Getty Images (right) of a couple and their child throwing disposable plates and other food ware up in the air. The title of the article is “Celebrating Throw-away Living”. 

It's easy to understand why plastic became popular. It is easy to mold into different textures and shapes, can be flexible like a plastic bag or rigid like the keyboard I’m using to type this blog post, it is impermeable so it can serve as a barrier for oxygen and bacteria, and it is cheap to produce. Plastic is also extremely durable: so durable that it lasts essentially forever. It seems crazy that a material that lasts forever is the underpinning of single-use products that are meant to be thrown away!

Plastic does not biodegrade. It fragments into smaller pieces instead called microplastics, fragments 5mm or smaller. These fragments are now permeating our oceans to the point that they can reasonably be called the smog of the sea. These small plastic particles are ingested by ocean animals, from the smallest fish in the sea to huge filter-feeding whales. This is an environmental crisis. It's also a social justice crisis, and I’ll explain why.

According to 5 Gyres, a California-based organization that fights global plastic pollution in our oceans, in the US an average of 3 million water bottles are used per hour, a number that has continued to grow despite well-publicized city bans of single-serve bottled water and the faltering recycling system. Since the January 2018 China plastic ban, cities like Memphis, Tennessee and Deltona, Florida have stopped their recycling programs. Earlier this year, RePlanet, the biggest recycling center in California, went out of business, shutting down all of its 284 centers because there is too much plastic waste and not nearly enough infrastructure to reprocess plastic into new materials. The accumulating plastic waste is either going into landfills or oceans, or being incinerated, adding to climate change worries and adding air pollution disproportionately in majority-Latino and black communities.

So, what to do? First, recognize the scale of the problem. Plastic bottles are the number two in the top five single-serve disposable items. Maybe switching to reusable steel canteens instead of the single-use plastic bottle at a single winery in California seems insignificant, but over the eight and a half years since we made the switch, we've saved the production of more than 161,000 plastic bottles. Every reduction of 1000 bottles reduces demand by 40 gallons of oil and eliminates the release of 142 pounds of CO2 into the atmosphere. And that's just the production. The reprocessing or destruction of these bottles requires additional resources and releases additional pollutants and greenhouse gases into the atmosphere. We are just one of more than seven million businesses in California. Imagine if one in ten found a similar area where they could make a change that reduced their waste and helped their bottom line. If more and more people set aside a little bit of convenience to begin practicing more sustainable ways of water consumption, perhaps sooner than later our culture will begin to see throw-away as what used to be the norm. Think of other norms that have changed surprisingly rapidly, like smoking in restaurants, bars, and airplanes.

A New Winery Wastewater Wetlands Area

Back in 2005, the state of California passed a law requiring wineries to treat their wastewater rather than releasing it to a normal septic system. This made a lot of sense to us because the lees and other winery by-products can be acidic enough that they impact the normal microbial function of leach fields. But, what sort of water treatment system was an important question. Most wineries chose a contained treatment unit, basically a small version of the treatment plants that cities or industrial operations install. We chose to go a different way. One available option was to build a wetland area where the roots of water plants would filter the winery wastewater as it passed through a series of gravel-filled lined ponds, until it was clean enough to be applied as irrigation water or to keep dust down on the roads. This solution creates wetland habitat for water-loving birds, amphibians, and insects. We were the first winery in the Central Coast to choose this (at the time novel) solution, and completed the construction of our first iteration of this project in 2006. We have enjoyed the benefits (including getting visits from this great blue heron) ever since.

But we're processing more grapes than we were in 2006, between the winery expansion we completed in 2011 and the growth of our Patelin de Tablas program, and in busy periods in recent years we've been pushing more water through those wetlands than they could really process. So, one of our big projects for this year was to expand the wetland area to the appropriate scale for our production. If you've driven into (or by) the winery in the last six weeks, you've likely seen the work going on:

I think the whole thing looks glorious. This next photo shows off the flowers a little better. It also shows a view of the holding pond in the background. We'll make good use of this water, likely to keep the animal enclosure that's right next to this green and growing all summer long:

All wineries (and all businesses) are faced with problems to solve, whether they be inherent in the business or mandated by regulation. Finding solutions like this, that fit into our larger goals and ethos, is one of the real pleasures of running this particular business. The next time you come out to see us, look left as you turn into our gate and you'll see it. Maybe our heron will even make an appearance for you.


A massive honey harvest from our new Langstroth hives means... a great vintage?

Could a prolific honey bee year be indicative of a stellar wine grape vintage? I think so!!

Keeping bees in Paso Robles is no easy task. Years of drought, cold winters, and extreme heat are a just a few of the many factors as to why this is true. Nationwide, beekeepers are losing colonies due to pesticide use, Varroa Destructor (a parasitic mite that attaches itself to the thorax of a honeybee and grows large enough so that the bee can no longer fly), and ever changing weather patterns. All that said, if one was to decide to start beekeeping in 2019, on the west side of Paso Robles, it would have seemed easy.

The rainfall this year was prolific. Not so much the amount of rain received (roughly 35” here at Tablas Creek, which is excellent but was not a record by any means) but the consistent wet weather pattern we were in. As opposed to sporadic, large storms that would dump 3” at a time (there were definitely a few of those) leaving stretches of sunshine in its wake, the weather was regularly wet, with 69 days producing measurable precipitation, the most in the 23 years we've had our weather station. This was great for many reasons. First, the ground was able to become fully saturated before the rain started to run off. This allowed for deep percolation helping to recharge all of our deep aquifers in the area. This fully wetted soil profile in combination with the cold weather (30 days reached below freezing temperature on the property) ensured that any dormant wildflower seeds within the soil profile stayed dormant until soil temps started to rise. It also ensured that the cover crop would have all the water it needed to thrive into early summer. Lastly, it all the moisture meant lots of grass, and we were able to successfully graze our 200+ sheep through the vineyard at least two times, some blocks seeing a third pass. The nutrients provided by the animals broke down in all the wet weather and moved through the soil profile more efficiently.

When the days started to lengthen and the soil temp started to rise, we were rewarded with a cover crop that grew to be seven feet tall in places. The Cayuse Oats in that cover crop mix provided some of the strongest scaffolding for our Purple and Common Vetch I’d ever seen. Our beneficial insectary/nectary plantings throughout the vineyard were an explosion of purples, reds, yellows, oranges, and white flowers. On the banks of Las Tablas Creek were blankets of miner's lettuce. On every hill in the Adelaida you’d see brilliant patches of phacelia, mustard, fiddleneck, lupine, sage, and poppy. In the forests were elderberry trees, madrone and oaks bursting with pollen. In other words, the nectar flow was on!!!

As soon as we posted the swarm catchers throughout the vineyard in mid-April, they started getting hits. In total, we caught six swarms this season. Then came the tricky part, putting them in a hive and getting them to stay. Normally, this process isn’t that hard due to the fact that we had been using Langstroth Hives (the square hive body we are all familiar with). The native swarms seem to establish themselves more easily in these hive bodies. It’s hard to pin-point why, but I’ve always had good success. But this year, we decided to try something different: Top Bar hives. For more, check out this short video:

Top Bar beekeeping is one of the oldest and most commonly used forms of beekeeping on the planet. There is only one long horizontal box in which bars are laid across the top. The bees build their comb off the bottom of these bars, filling the void below. You do not need frames, foundation, or wire for the comb to be built. You do not need an extractor for the honey and there is no heavy lifting of boxes or supers. The bees are less agitated when you work the hive because when inspecting you are only moving one bar at a time as opposed to pulling entire frames or moving entire sections of the box altogether.  Having been the first time I’d ever worked with this style of beekeeping, it took a few tries before I could get a swarm to stay put. Through trial and error, I realized a few things. Always hive a swarm in the evening (just before dark), make sure there is food in the hive (50/50 sugar water mix), and make sure there are large enough entrance/exit holes for the bees to allow for heavy traffic. Of the six swarms we caught, only one took. But it is thriving. Of the 31 top bars, 24 of the have full comb drawn out. Knowing what I know now, we should be able to fill the rest of the hives next year (if we are lucky enough to have similar conditions).

Honey production has been amazing thus far in our Langstroth hives. To date, we have harvested around 72 pounds of honey off of just one hive and it is still coming. Obviously this has been due to the prolific bloom we experienced early in the year. There is another factor at play as well. It wasn’t just the size of the bloom, but the length of the bloom that has been so astounding. In years past we’d start experiencing pretty high temps earlier in the season which causes the bloom to end a bit more abruptly as the ground dries out faster and the sun beats on the flowers. This was one of the coolest springs and early summers I’ve experienced in the Adelaida. We've only seen 3 days reach 100°F, and another 23 reach 90°F. That may sound like a lot, but it's not. The average summer high here is 93°F. And even when our days were warm, it was only for a few hours, as our evenings have been chilly. We received more than an inch of rain in May, which also prolonged that top layer of soil from drying out. There simply was no stress on the plants, allowing them to go through their entire life cycle at their own pace, which in turn allowed the honey bees to continuously harvest pollen and nectar at their own pace. This lack of stress is why I am also predicting an amazing wine grape vintage for Tablas Creek Vineyard. 

Being an older vineyard for the west side of Paso comes with its challenges. Like humans, the longer a vine is alive the more exposure it has to disease and virus. Many of our older blocks at Tablas Creek have some level of trunk disease or virus within them.  When we experience prolonged periods of heat in the vineyard, vines will experience some level of stress. Vines that have trunk disease or virus are stressed even more so. The symptoms and signs of the disease and virus express themselves sooner, thus restricting that vine's ability to set fruit, grow leaves, sustain the crop, and ripen the crop. And even with our last warm 10-day stretch (average high temp: 95°F) the growing season has been a mild one. The vineyard has not been truly stressed, and you can tell. Typically, in our most infected blocks, the signs and symptoms of virus and disease are obvious at this point. That is just simply not the case this year.

To date, I’ve not seen this property so vibrant and green at this point in the season. It is August and we’ve yet turn the water on in any of our irrigated blocks. In most years past, our irrigated blocks had been watered at least once already. This lack of stress is why I am predicting an amazing vintage. All of our vines both healthy and unhealthy have been allowed to go through their natural growth cycle with no hiccups or speed bumps in the road. Obviously, only time will tell what this harvest holds in store for us. But if we continue on this path, it could be a vintage unlike any other.

Farmers use nature’s cues to predict many things on their property. In Paso, we always say that when the Almonds start to bloom, the grapes are two to three weeks behind. I think I may have gained another this year. “If I am pulling 75 lbs. of honey out of one box, we are gonna be making some killer wine this year!”

A lighter wine bottle revisited, 10 years and 1,370,000 pounds of glass later

Almost exactly nine years ago, I posted a blog called Introducing a Greener Wine Bottle, in which I shared our decision to move our flagship wines from a heavier bottle to a lighter one. Today, we're bottling our 2017 Esprit de Tablas in a (slightly updated) version of this very same bottle. If you add up the impacts of this change over the ten years that we've used this lighter bottle, the numbers start to get really big. I'll throw a few out there.

A decade ago, we were using two bottles. Our flagship wines were in this beautiful but massive bottle that weighed 31.5 ounces empty. Our other wines (this was pre-Patelin, so that was our Cotes de Tablas and our varietal wines) were in a more classic Burgundy bottle that weighed about 19 ounces. Fast forward to 2019. Our current bottle, which we use for all our 750ml wines, weighs 16.5 ounces empty. For the roughly 8,000 cases of wine a year we switched over from the heavy bottle, that 15 ounces per bottle adds up to 90,000 pounds of extra glass weight, or about 11 pounds per case. Add in the roughly 25,000 cases of wine that on average we would have put each year in the 19-ounce bottle, saving just under two pounds per case, and you save another 47,000 pounds of glass weight. So, in ten years we have saved roughly 1,370,000 pounds of glass weight, or 685 tons.

That extra weight came with costs at every stage. We had to pay more to have it manufactured, shipped to us, and then either trucked away for wholesale sales or sent via UPS or FedEx to our direct customers. We needed larger wine racks to fit the wines in our library, which means we could store fewer bottles per square foot of space. Our trucking company can fit three more pallets of our flagship wines (22 pallets vs. 19) in the new package before reaching their legal weight limit, which means that for the roughly 40% of this wine that we sell via wholesale, we've had to run roughly one fewer full truck of cases of wine each year up to the Vineyard Brands warehouse in American Canyon, CA. And those are just the hard costs. The invisible environmental cost savings are massive as well, with less weight having to be driven or flown around in every stage between manufacture and consumption. 

There was a nice article by Dave McIntyre earlier this month in the Washington Post about Jackson Family Wines' moving their production of two of their major brands into glass about two ounces lighter per bottle. Esther Mobley, of the San Francisco Chronicle, picked this up and added her approval on Twitter. I responded with our own story, and this started a couple of conversations I found fascinating. The beginning:

You might find my "and people mostly hate them" comment about the larger bottles surprising. But before we made our bottle change, we reached out to our fans on Facebook, Twitter, and this blog asking for what they looked for in a wine bottle. I was expecting a mix of people in favor of the solidity and feel of the heavier bottles and those who wanted the greener environmental footprint of the lighter bottles. And there were a few of each of those. But the overwhelming majority of the responses focused on utility: people wanted bottles that they could lift and store comfortably, and larger bottles don't fit in many pre-made wine racks. The hostility toward the larger bottles was eye-opening. From one representative comment on our blog:

I don't care what the bottle looks like, I care what's inside it. I don't want to pay for heavier glass and increased transportation costs. I don't want bottles that won't fit in my wine rack unless I put them in the Champagne section.

I've never refused to buy a wine because I thought the bottle looked cheap, but I've stopped buying several because they had larger, heavier, too tall or silly shaped bottles.

And another:

When a case of wine from one of my favorite California producers (such as Tablas Creek) arrives via UPS at my office, and I can barely pick up the damn box to take it home because the producer used those stupid two-pound wine bottles, you better believe I notice. 

Once we wrapped our heads around this as primarily a question of utility, the choice was easy, and we made the switch. The next year, we were able to work out an agreement with our glass company to make a new mold based on this lightweight bottle, but with an embossed version of our logo on the neck, and we haven't looked back. To us, the bottles look great, feel great, and we can feel good about the positive impacts that making this change has made on both our bottom line and our environmental footprint.

So, given that lighter bottles cost less and people seem to like them more, why are there still wineries using the heavy bottles? That's complicated. You can get a sense of some of it if you click through Esther's twitter thread and look at the responses. There is definitely a perception in the market that a heavier bottle signifies a more serious wine. And I'm sure that this is true, to some extent, although I think it's important to mention that most of the great wines from Burgundy and Bordeaux, not to mention California icons like Ridge and Calera, have stayed with classic bottle shapes and weights. But I feel like these larger bottles now have more detractors than they ever did before, both because of the sense of environmental tone-deafness that they convey (I had one consumer recently compare it to driving around in a Hummer) but mostly because consumers have to deal with the difficulties and higher costs of transport and storage.

It’s also worth noting that we realized that only a small percentage of our bottles ever appear on a retail shelf, where the bottle has the potential to play into a purchasing decision. Half our production we sell direct. More than half of the rest we sell in restaurants, where all that customers see is a name and maybe description on a wine list. And of that remaining ~20% a significant chunk is sold online, where bottle heft isn’t a factor.

So, I'm hoping that the trend I'm seeing will continue, and more California wineries will make similar decisions to move to lighter bottles, and focus on differentiating their marketing in other ways.  After all, bottles are only a part of the perception. Between labels and capsules, wineries have plenty of opportunity to distinguish themselves, and marketing is, of course, so much more than package design anyway.

Hummers went the way of the dinosaur a few years ago. Here's hoping that wineries feel comfortable ushering the Hummers of the wine bottle world offstage too.


Compost: Momma Nature’s Gift (A Step by Step Guide)

Biodynamics has lots of facets, including applications of minerals, planting of flora, integration of fauna, and even reacting to celestial stimuli. But one of its most important components is one of the oldest, and one of the most practical for the home organic gardener. What is this magical tool? Compost, of course.

What, where, and how do you compost? I'm happy you asked. Essentially, when you compost, you are encouraging a natural process, and then using the beneficial byproduct of what in the wild would be a part of the yearly cycle of growth and decay that takes place in every stand of trees, every forest, and most of all, every jungle on the planet. Simply put, compost is the biodegradation, or breakdown, of plant material that falls to the ground in the form of leaves, fruit, branches etc. The second that material hits the ground, the breakdown begins. This food chain is often invisible, and frequently smelly, but without it, there is no life on this planet. Small insects and microorganisms begin to feed on the litter. As the litter is continuously broken down by various organisms -- insects that you can see with the naked eye, all the way to microscopic bacteria -- nutrient rich humus (not the cracker spread) is excreted. As the humus accumulates, beneficial bacteria and fungi begin to grow. These bacteria and fungi work in symbiosis with the root structures of living plants, allowing those plants to take in the nutrients that are contained in the humus.

In a farm setting, where we try to recreate this natural process, there are many ways and forms of composting. At Tablas Creek, we utilize the process commonly known as wind row composting (long rows that are typically 7-8 ft. wide and 5-6 feet tall). When starting the pile, there are a few crucial steps/measures that need to be taken to create a biologically active environment. First and foremost is the carbon (dry, woody material) to nitrogen (“green” material or plant material that still has moisture within it such as pressed grapes or the rachis/stems of the cluster’s that had recently gone through one of the first steps in the winemaking process known as de-stemming). Ideally, this ratio should be 3:1, carbon to nitrogen. Our carbon source comes from all of the prunings collected from across the ranch. We put these through a chipper and add walnut tree wood chips from piles we kept after clearing the old walnut trees from the part of the property known as “Jewel Ridge” (this will eventually be our next dry farmed planting).

The carbon sources are collected and piled up throughout the winter months. During harvest is when the magic happens. As grapes are pressed and de-stemmed, we begin to incorporate the skins and rachis into the piles of woody material. The breakdown of the woody material and formation of humus begins at this point. When the green material starts to decompose, heat and moisture start to release, and microorganisms that feed on the woody material begin to feed and populate. At this point, it is crucial to monitor the temperature of the pile. The ideal internal temperature of a pile that is actively composting is 150-155 degrees Fahrenheit. When green material is incorporated into the pile in the beginning stages, decomposition of the green material can occur so quickly that temperatures within the pile can skyrocket. When a compost pile experiences prolonged temperatures of 170 degrees and above, anaerobic (oxygen deprived) conditions begin to form, which both suppresses the growth of of beneficial microorganism and allows other non-beneficial microorganisms to take their place. To prevent this from happening, we “turn” the pile.

Turning our compost pile has become what Neil Collins, Tablas Creek's most esteemed (OK, he's the only winemaker since inception), termed an “obsession” of mine. He is correct. Taking a 20” thermometer and inserting into a pile that is 8’ wide, 6’ tall, and 50 yards long, at this point in the year and reading temperatures that exceed 170-180 degrees absolutely blows my mind. Therefore, to encourage the beneficial microbiological activity within the pile, and with hopes of trying to get the temperature to stabilize at 150-155 degrees Fahrenheit, as the sun is coming up I hop in the loader, and begin to move the pile, scoop by scoop to an adjacent location. This process incorporates oxygen, decreases the temperature, and disrupts and any anaerobic activity that may be beginning to occur. It’s an amazing sensation when you start getting into the heart of this pile that is creating ridiculous amounts of heat, steam, and smells during cold mornings at sunrise. The aerobic, properly composting sections of the pile smell amazing. Like earthy, mulled cider to an extent. When you hit the anaerobic areas, they also smell amazing but would be considered more of a stench than anything. I’m still working on a descriptor, but think of a hot swamp. No bueno. During this point in the year/composting process, we turn the pile every 2-3 days. In time, the temperatures begin to stabilize and the constant need to turn the pile subsides. The microorganisms that have been digesting the woody material and in turn releasing the beginning stages of humus are in full effect. Beneficial fungi and bacteria begin to bloom at rapid rates. This is our happy place.  In nature, it can take many, many years for humus to even begin to form. A properly managed compost pile expedites that natural process. From last week:

Traditionally, we’ve spread the compost created on the farm throughout the vineyard and followed up with an implement known as a disc which incorporates the compost into the soil profile. But that's not the only way we use the compost. We have expanded our compost tea program: a process in which you take compost, soak it in a tank of water that is heavily oxygenated, and encourage the beneficial microorganisms to move off of the compost into solution. Next we add nutrients to the tea, and the compost's beneficial microorganisms (now in suspension in the water) begin to feed on these nutrients and extrapolate at a rapid pace. This finished tea is like a probiotic shake for a grapevine, packed with beneficial organisms, and can be injected directly into the soil profile through your drip system or applied to the vine leaves throughout the vineyard. If applied through the drip system, whatever organic matter resides in your soil profile will break down faster while foliar applications have shown to combat powdery mildew and provide nutrients to grapevines.

Composting is a necessary process that takes place on most if not all organic and biodynamic farms across the world. Yes, we could purchase organic fertilizers, but why would we want to, when composting means we reuse the waste generated on our farm, we produce a product that can be used in many ways to increase the fertility of our soil and the health of our vines, and we do it all without having to bring anything in from the outside, with all the trucking and greenhouse gas impact that implies.


Consumers don't really understand the difference between Organic and Biodynamic

Neil, Jordan, Gustavo and I spent last weekend representing Tablas Creek at the International Biodynamic Wine Conference, up in the beautiful San Francisco Presidio. San Francisco was putting on a show, with gorgeous cool, sunny spring weather, and the view of the Golden Gate Bridge out the Golden Gate Club's windows was pretty much the best conference backdrop imaginable. The audience there was passionate and eager to share what they were doing. I was grateful that the show was mostly free of the mysticism (think lunar cycles and homeopathy) that makes many people leery of Biodynamic practices.  Instead, it offered deep explorations of soil microbiomes, of the science behind the Biodynamic preparations, and of the costs and benefits of different farming practices like tilling (vs. no-till), composting (what's the right mix and what are the benefits of applying it in tea form vs. spreading solid compost), yeasts (what happens as different "native" yeast strains take lead), and pest control. It offered grand tastings for the trade and for the public.  It was an inspiring mix.

The conference also offered a few different sessions on the marketing of Biodynamic wines.  One such panel discussion featured Gwendolyn Osborn, wine.com's Director of Education and Content. They recently added a Biodynamic landing page (wine.com/biodynamic) for all the wines that they sell made from Demeter-certified vineyards.  It’s great for the category to see such an influential retailer provide this focus.  And people (at least some people) are asking about Biodynamic wines.  In the archives they have from the hundreds of thousands of chats between their sales consultants and their customers, roughly a thousand contained the term "biodynamic". (By contrast, according to Gwendolyn, "organic" appeared about five times as often).

At the same time, the examples she shared suggested that wine.com’s customers, at least, don’t really distinguish biodynamic from organic. Most of the examples she showed that asked about biodynamic did so in a “biodynamic or organic” phrasing (as in, "I'd like to buy a Sauvignon Blanc around $20, and I'd prefer it be biodynamic or organic"). This is interesting to me in part because my elevator pitch introduces biodynamics in a very different way from organics. In fact, in many ways they are opposite approaches to sustainability.

Let me explain. Organics is, essentially, a list of things that you can’t do. Certification for organic status requires verification that you do not use the chemical herbicides, pesticides, and fertilizers that together have come to define modern industrial farming. As such, the practice of organics is preoccupied with the effort to find organic replacements for the prohibited chemicals you can’t use. Think organic fertilizer. Or the pursuit to make an organic Round-Up. In both cases, you're still controlling the application of fertility, and the systemic removal of weeds and pests; you're just doing it in less toxic, less chemical ways. That's a great first step, which we should be applauding.

A quick semi-aside: the sustainability certification movement came in for some pretty heavy criticism at this conference as in many cases offering little more than greenwashing.  While I'm of the opinion that we should celebrate anyone's move toward greater sustainability -- whether that's moving from conventional farming to sustainable, or from sustainable to organic -- I think there's a lot of truth to one presenter's comparison of the average sustainability certification as cutting back from 20 cigarettes a day to 10, in that you're still applying chemicals and poisons:

Biodynamics, by contrast, is the effort to make a farm unit into a self-regulating ecosystem. It prescribes the conscious building of living soils through culturing biodiversity and adding preps that contain micro-nutrients. Together these encourage the growth of healthy microbiomes and (thereby) farm units. Yes, the elimination of chemicals is a prerequisite, but it’s not the goal. Instead, it’s a necessary step in the creation of a self-regulating environment. And that healthy environment, which is resilient in the face of pest or weed pressures, is biodynamics’ reward.

In our work at Tablas Creek, the self-contained farm unit appeals to us because we are dedicated believers in doing everything we can to express our property's terroir: the character of place that shows through in a wine. Each thing that we otherwise have to bring in from the outside that we can instead create internally through a natural process brings us one step closer to that ideal of expressing whatever terroir we have in our land. And that’s why biodynamics has so much appeal for us: on the one hand, we're building a healthy vineyard that will hopefully live longer, send roots down deeper, and be more self-regulating. On the other hand, the fruit -- and, assuming we do our jobs in the cellar, the wine -- will be as distinctive as possible, with its Tablas Creek personality shining out. 

That's a win for us. And for our customers. And for our neighbors and the community we're a part of.


Co-Branding with Patagonia: Modern Stewards of the Land

He strolls into my office, bright and bushy-eyed with his dilapidated Yeti in hand, no doubt on his fourth or fifth cup considering he’s been up with the sun. His stained brown Carhartts do little to hide the evidence of our lambing season that is currently going on here at Tablas Creek Vineyard. As intrigued as I am, I dare not ask about the exact origins of the stains because after all, I myself am barely through my first cup. Maya, one of his Border Collies, slinks in and flops down upon my feet. Already this is an interview I can get behind.

Nathan Stuart is our shepherd here at Tablas Creek, and one of the central figures in our recent co-branding with outdoor retail giant Patagonia Inc. We all know them for their unparalleled wizardry with all things fleece and Goretex, but they also represent something far beyond climbing gear and backcountry men with a penchant for beards.

Not only is Patagonia a leading example on sustainable, green business practices with their Footprint and Worn Wear programs, but they are also one of the leading corporate voices in the fight for preserving our lands for generations to come.

They are known for radical moves such as donating 100% of their Black Friday sales to grassroots nonprofits ($10 million in 2016 alone). And their recent fight with the federal government on behalf of our national parks. The fact that they are a B Corp -- a for-profit company that is using the power of business to solve social or environmental problems -- says a lot.  Their mission statement is "Build the best product, cause no unnecessary harm, use business to inspire and implement solutions to the environmental crisis." 

You could say we’re fans.

Late last year, we became one of the companies in the United States that Patagonia has been willing to co-brand with. Co-branding happens when two brands agree to join forces to share a product indicative of both their identities. Upon learning this, I was eager to unpack what the process was that led to this move by both our companies, as well as why we were chosen to be one of the companies to share brands on their gear and be able to resell it in our tasting room. I can also safely say, the Tablas crew has never looked more dashing battling the frosty morning winters here in Paso. 

Basically it all boils down to two words: carbon sequestration.

If that phrase makes you scratch your head as much as it did me, have no fear because that is where our indomitable shepherd Nathan comes in, along with our Viticulturist and resident vine whisperer Jordan Lonborg to explain the science behind it. But first, some context.

Since our inception, Tablas Creek has made it a priority to farm with as positive an environmental impact as possible. We have been organic since the day our first rootstock touched the soil and certified Demeter biodynamic as of last year. As Nathan says in his characteristically blunt way, “at Tablas we were organic before it was popular. We’re certified biodynamic which is just taking that to the next level. We’re holding ourselves to a higher accountability and pushing to create something that goes beyond us.”

Our flock of some two-hundred sheep and alpacas, plus a llama and donkey or two, is the core of our vineyard's holistic management program. According to Nathan, "holistic management encompasses organic, biodynamic, mob grazing, rotational and regenerative grazing, and asks how we can best benefit the land. We use varied processes depending on the acres, so we are responding directly to the land and listen to what it needs from us to build the relationship." The sheep are moved every couple days to a new section of the vineyard, where they fertilize and till the soil, providing nutrients for our vines and controlling weeds. "The way we manage the sheep on our land is attempting to mimic the buffalo of the plains in centuries past" Nathan continues. The American plains were amongst the most fertile soils in the world, massive repositories of organic carbon, and the rotational grazing provided naturally by the vast, moving herds of American buffalo were a large part of why.1

While our grazing plan falls into Nathan’s sheepish hands, the care of the vines themselves is the responsibility of Jordan Lonborg, our Viticulturist. Upon joining the Tablas family in 2016, one of Jordy's first goals was to move forward with biodynamic certification. He broke down the soil and vine management in a way that didn’t leave my right-oriented brain spinning:

"We are creating a self-sustaining ecosystem right on the property. In order to do this we need to maintain the balance of the land. All of our grape skins, stems, and vine prunings are incorporated into our massive compost program and are returned to the soil on a yearly basis. We capture native bee swarms on the property and raise them to assist in pollination of our cover crops. There are large swaths of beneficial insect gardens planted throughout the vineyard to attract predatory insects, as well as providing a source of nectar and pollen for the honey bees in this arid climate. We also have an ever increasing raptor program on our acres as well. To enhance biodiversity we plant at least one fruit tree for every acre of grapevines on the ranch. Most importantly, we employ a group of 8-10 people throughout the entire year for vineyard work rather than hire random crews for labor as we need them. Our footprint is already smaller than most in this industry and we only plan on continuing to make moves to decrease it.”

So how do regenerative grazing and bee swarms and all these holistic processes tie into carbon sequestration? Carbon sequestration is the process of capturing atmospheric carbon dioxide and storing it in another form to help slow or reverse the accumulation of greenhouse gases, the vast majority of which are released by the burning of fossil fuels. Soil that is treated with anthropogenic fertilizers or pesticides is not able to accumulate or break down the organic matter that holistic soils can. Organic matter equals carbon in the soil, rather than the atmosphere. And there are other benefits. In Nathan's words: "Soil holds carbon. Carbon holds water. So if we hold more carbon in the soil instead of the atmosphere, we’re pulling more water out of the air. And water vapor is another greenhouse gas. Think of it like a holistic raindance if you will, which is attempting to slow the heating of our climate. The carbon is in the wrong place at the wrong time and we’re working on doing what we can to set us on the right path once again." Carbon sequestration is the key, ultimately, to reversing the most critical environmental impacts of the industrial revolution, and is the ultimate goal of the new wave of sustainable agriculture.

A short video that Nathan referred me to called The Soil Story by Kiss the Ground proved to be immensely insightful. Kiss the Ground is a nonprofit working on creating greater public engagement with the pervasive issue of global soil restoration. And not to mention their graphics guy has some serious skills. 

Between our holistic approach to vineyard management and Patagonia's stalwart belief in the fundamental importance of sustainable green business practices, the co-branding is something we can all be proud of. When I asked Jordy why he thought the Patagonia co-branding made sense he replied,

"When it comes down to it, it’s about trying to be the best stewards of the land we could possibly be. I think that’s the bottom line of both companies, obviously there’s a profitability side to it and everyone’s got to be able to run a business and make money, but that’s not the reason we come to work everyday. We use our position in the wine industry to shed light on important sustainability processes. And in the end we do spend more money than most wineries to achieve that stewardship and I think Patagonia’s probably right along the same path."

Leslie Castillo, our Tasting Room Team Lead as well as the wife of our shepherd Nathan, and avid reader of everything Yvon Chouinard, was our point woman in reaching out and building our relationship with Patagonia. “I 100% believe in what we do here at the vineyard with our wines, and so I also wanted to start working with people and companies that are like-minded, people that care about the planet in an intentional way and not just for marketing. I see that in Patagonia.”

She, along with all of us here at Tablas who strive to uphold the ideals we think a business should embody, are fortified all the more by the decision to co-brand with a company such as Patagonia.

We are merely two companies amongst thousands in our respective fields. But we each try to do our part individually. If we can work together to accomplish more, we should.

Our Skeptic's Embrace of Biodynamics

Back in 2010, I had the pleasure of listening to John Williams from Frog’s Leap Winery speak at the Yosemite Vintners Holidays.  Although the focus of his talk was on how underrated “off” vintages are with some age (or, if you prefer, how the tendencies which lead most writers to rate a vintage highly can often make the same wines short-lived) the conversation soon turned to his thoughts on Biodynamics, of which he has been one of California’s most vocal proponents.  His take was that most of the things that receive focus for Biodynamics (think cow horns and lunar cycles) were little more than distractions, and what mattered in Biodynamic farming was that doing so reestablishes a plant’s ability to make sense of its environment and self-regulate.  I found the whole talk fascinating.

In the last seven years, spurred in part by what I learned at John’s talk, we have been increasingly incorporating Biodynamic elements into Tablas Creek’s farming practices. We’ve been organic since our inception, and certified since 2003, so it wasn’t as though we needed to make a massive move away from chemical-intensive agriculture.  But Biodynamics still requires a shift in mindset from organics.  Organics tends to look for non-chemical alternatives to the chemical herbicides, pesticides, and fertilizers that define modern industrial farming. And that’s a worthy effort. But Biodynamics, which begins with the assumption that you have eliminated chemical interventions already, is much more concerned with creating environments that are self-regulating, where even non-chemical interventions are mostly rendered unnecessary.

So, we introduced our herd of sheep and alpacas into the vineyard. The animals fertilize naturally with their manure and graze down cover crops so we need to make fewer tractor passes to eliminate weeds. We started interplanting fruit trees and herbs, leaving sections unmowed, and planting other sections with flowering herbs, to attract and retain a diverse group of insect species that help control pests and keep soils alive and vibrant. We increased from a dozen to 39 owl boxes, to control gophers. We built beehives and captured a wild swarm to help preserve this valuable resource. And we redoubled our efforts to produce our own compost on site from our prunings and the grape must left over from fermentation, both to spread on the vineyard and to make into compost tea, to spray on the vines to combat mildew.

We made these changes partly because it made sense to us from a resource management standpoint – why not try to make our farm unit as self-sufficient as possible – but also because the idea of putting as little as possible from the outside onto our vineyard appealed to our ideal of terroir: the character of place that, reflected in wine, is the holy grail of winemakers around the world. We figure that the less that goes onto the vineyard that originates elsewhere, the greater the chance that we can allow the signature of our own land to show.

In the last seven years, as we’ve incorporated these new practices, I have come to believe that you can separate the tenets of Biodynamics into three broad sections. I list them in what I think is the order of their importance, which just happens to be the inverse order of what most laypeople (and maybe more important, mainstream wine journalists) tend to focus on with Biodynamics:

  • A broad subset that is basically just really good farming. This includes the prohibitions on chemical interventions (to preserve biodiversity and ensure that your soil is able to break down raw materials into nutrients your vines can process). And the efforts to turn a monoculture into a polyculture (to ensure a healthy diversity of insects and microorganisms in the soil and to ensure habitat for the natural controls for pests). And the focus on composting (to turn the by-products of your farming into nutrients for your crops).
  • Another broad subset that includes the micro-additions of Biodynamic preparations. This is where the cow horns come in. For example, some preps are made by packing various natural products (such as manure, or silica) into the hollows of the cow horns, letting them mature for some time. Other preparations are made with botanicals, such as stinging nettles, horsetail, or chamomile, which are then composted, fermented, or dried.  Whatever the preparation, when applying it to your vineyard, you dilute it massively in water before spraying the resulting solution onto your vines. I think it’s safe to say that none of these actions will harm your crops, and they probably do a small amount of good. How much good can they do, when the prescription is to dilute 25 grams of manure in 13 liters of water (a ratio of 1:520)? Or 1/4 teaspoon of stinging nettle in 1 gallon of water (a ratio of 1:3072)?  I have my doubts, although chemical reactions can happen at much lower concentrations than this. But at least, I’m confident any impact these actions have on the vineyard are going to be positive.
  • A subset relating to the Biodynamic calendar. Here I think things are on tenuous ground. While it is incontrovertible that the moon, at least, does have some impacts on Earth (think the tides), the moon’s gravitational pull on Earth is roughly 1/300,000th of the pull of the Earth. Might it impact things like sap flow? I guess, in a tiny way. But I have to think that the lunar impacts will be dwarfed by the other stimuli a vine is receiving from things like length of daylight and soil temperature. And as for picking, I think it’s even harder to make a credible case that what’s going on in the heavens is going to make a difference in the characteristics of the fruit you pick. On the other hand, waiting for the calendar (published months in advance) to tell you when to pick can cause some damage if you’ve ignored the weather, say, during a heat spike. I think that all this is really best ignored.

So, when we decided to pursue Biodynamic certification late last year, we didn’t know whether the powers that be at Demeter (the international organization that administers and protects the Biodynamic trademark) were going to view what we were doing as sufficient, or whether we’d learn that we’d need to make significant (and perhaps unwelcome) changes to our practices in order to qualify.  We ended up deciding that if we needed to make changes in order to qualify for certification that we felt would jeopardize our vineyard or our wines, we wouldn’t lose much. After all, we’d done what we’d done so far without certification.

But it was still tremendously encouraging to learn that Demeter itself had come to the conclusion that if a winery focused on the elements that I grouped together in the “really good farming” bullet above, and made a credible effort at those I classified as “micro-additions of Biodynamic preparations” it was good enough for them.  And so, we moved forward with the certification process.

And I do believe in certification. I think it’s great that many growers (and farmers) are pursuing organic or Biodynamic practices without any goal of becoming certified. The more people who are farming in an Earth-friendly way, the better. But at the same time, certification gives an outside validation that your practices aren’t lip service, and are being applied consistently and rigorously.

So, it is with pleasure and pride that I announce that Tablas Creek Vineyard is now Biodynamic certified. That includes the grapes we grow, the olives, eggs, and the vegetables in our staff garden, and even the lamb that we harvest a few times a year from our flock.

If this makes you happier about your choice to consume Tablas Creek, that’s great. If it doesn’t make any difference, that’s fine too. We’re confident that the proof is in the bottle.

Bringing Sustainable Eating and Drinking Full Circle; Grilled Spareribs and Full Circle Pinot Noir

What is the best thing about summer? Some may say it's basking in the heat of the sun's glow. Another may say it's about exploring nature in it's prime, with trees and flowers in full bloom. Here at the winery, summer's are some of the best times for us and it's not hard to see why. Clusters of grapes are thriving on the vine, the tasting room is packed with visitors on holiday, and our vineyard crew is prepping the property for what is most assuredly going to be another busy harvest. But what about the weekends and times when we're not at work? Chances are you'll find us outside and if it's around dinnertime, we'll most likely be grilling and cooking outside because that, to some, is the best thing about summer.

When you're going to a summer barbecue or cookout, chances are there'll be some sort of grilled meat. This spring, we unveiled a project that put the spotlight on our collaboration with Larder Meat Co., introducing sustainably harvested lamb (available now through 7/12) off our organic property to the local community (We wrote a blog piece on this back in February, titled Tablas Creek Lambs and Tablas Creek Lamb). This gives you all the opportunity to enjoy some delicious lamb, and hey, if you decide to have a bottle of Tablas Creek wine alongside, even better! And although the lamb program is fairly new, an event we have been hosting for the past 13 years is our annual pig roast. Something that our wine club members come back for year after year is a favorite among not only our members, but our staff as well! A fair amount of the meat is served at the event, however, we do hold onto a small amount for our staff to enjoy, and with the busy week coming to a close, I thought what better way to end the work week than with an Eat Drink Tablas pairing of grilled pork ribs! Here are the results from today's efforts:

If you know a little bit about Tablas Creek, then you know that we're known for our Rhône wines, primarily blends but showcasing single varietal bottlings, like Mourvédre and Roussanne. You may also know that foundation of Tablas Creek started with the shared vision between Robert (Bob) Haas and the Perrin family of Château Beaucastel. What you may not know much about is the Pinot Noir we produce. If you're thinking Pinot Noir isn't from Rhône and more specifically, Châteauneuf-du-Pape, you'd be correct- it's a grape found most famously in Burgundy. Burgundy, for Bob was the gateway for loving French wine. He fell in love with Burgundy and one of his many career highlights was introducing the American palate to the austere wines of the region. It was only fitting, since he started his career in Burgundy and with Pinot Noir that he would bring his love for the grape full circle by growing a small parcel at his home in maritime affected Templeton. 

Graced with some American and French oak character, the Full Circle Pinot Noir is rich on the nose with vibrant aromatics. Whenever I'm tasting the Pinot Noir, I am reminded of a talk led by Bob, out amongst the vines in his backyard. Describing the wine perfectly and giving a very interesting talking point that, through most of the wines at Tablas Creek, there is a certain fluidity and consistency that you can count on. The Pinot Noir still has the Tablas Creek stamp of elegance, but with slightly different character. The wine ages in year-old Marcel Cadet 60 gallon barrels, which is quite different than the 1200 gallon neutral oak Foudres we employ on a day-to-day basis. That being said, I love pouring this wine for people who know our wines, love our wines, and are curious to try something different. Combated with the fantastic story of Bob's importing career, this wine resonates on both the heart and palate. In the glass, it's gorgeous, deep, and just one whiff lets you know it's rich. Aromas of cherry and figs are fully present with nice spice notes, making me crave one of my grandmother's homemade pies. I also get this smell that reminds me of raspberry liqueur, rich and concentrated. On the palate, I get a lot of that cherry, but in the form of cherry cola. There's a lot of this creamy chocolate character that brings out the chocolate enthusiast in me. Drink this wine now, or don't. I think 2014 has to be one of the most lush and approachable vintages, allowing for youthful consumption.

If you do drink this wine now, drink it with a side of grilled spareribs. The recipe I pulled for this pairing (via Bon Appetit) called for reducing some cans of cherry cola with cherry preserves and Dijon mustard for what feels like hours, until you're left with this sticky, thick glaze. The glaze plays up the fruit notes in the wine and with the added vinegar and soy sauce, there's some tanginess that plays well with the mouthwatering quality of the wine. We loved this pairing for many reasons, one of them being that we brought our "work" outdoors for a delicious lunch at the top of the hill in the vineyard! A satisfying meal with friends, I'm not sure there's a better way to end the day.
